Leftover chicken & rice skillet

A one-pan skillet that crisps yesterday's rice and warms the chicken through without drying it out. Uses: Roast chicken, Cooked rice, Spinach, Cherry tomatoes.

Ingredients

  • 2 cups cooked rice, cold
  • 1½ cups cooked chicken, torn into strips
  • 1 tbsp neutral oil
  • 2 garlic cloves, sliced
  • 1 cup chopped vegetables you already have
  • 1 tbsp soy sauce or tamari

Step-by-step

  1. 01Heat the oil in your widest pan over medium-high until it shimmers.
  2. 02Add the garlic and vegetables and cook 3 minutes, stirring, until the edges colour.
  3. 03Break the cold rice apart with your fingers and add it in an even layer. Leave it undisturbed 2 minutes so it crisps.
  4. 04Stir in the chicken and soy sauce, then cook 3 more minutes until everything is hot through.
  5. 05Taste, add a splash of water if it looks dry, and serve straight from the pan.
